Hello! Here are some very vegetarian friendly recipes (that are delicious, if you were wondering). At the bottom, I also have some great vegetarian dishes at restaurants around Utah and/or California. This page will be added to frequently! -Allison
Two-Ingredient Chocolate Muffins
- One 15-oz. can of pumpin puree
- One box of Devil’s Food Cake
- Chocolate chips (optional)
Preheat oven to 400 degrees. Mix ingredients together. Do not add anything beyond these ingredients (ignore all directions on the cake mix). The chocolate chips are optional. You really don’t need to add them, but it adds a bit of genuine chocolate to the final product. Spoon batter into muffin pan. Bake for 20 minutes. Cool.
Alternative: Use spice cake mix, and perhaps sprinkle in some pumpkin pie spice. When using chocolate cake mix, you want to let the chocolate stand out (you won’t even taste the pumpkin), but when using spice cake mix, the pumpkin is going to be prevalent, which is a really good thing if you like pumpkin.
Note: These actually taste better on the second day. They freeze well, too. Just defrost in the microwave. I almost prefer them like this as opposed to fresh.
Pumpkin Bread
- 12 tablespoons (1.5 sticks) unsalted butter, melted
- 1-1/2 cups all purpose flour
- 1 cup whole wheat flour
- 2 teaspoons baking powder
- 1 teaspoon pumpkin pie spice
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 1 can (15 ounces, or 1-3/4 cups) pumpkin puree
- 3 large eggs
Preheat oven to 370 degrees. In a large bowl, whisk together flours, baking powder, pumpkin pie spice, cinnamon, and salt. In a medium bowl, whisk together sugars, pumpkin, melted butter, and eggs. Combine everything together.
Divide batter into loaf pans (either two 8-1/2-by-4-1/2-inch pans, or five 5-by-3-inch pans, or something). Bake about 50 minutes, or until a toothpick stuck in the center comes out clean. Let cool 10 minutes. Transfer loaves to a wire rack to cool completely. Sprinkle with sugar glaze if you’d like!
Whole Wheat Waffles
- 1 3/4 Cup whole wheat flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 2 eggs
- 1 3/4 cups milk
- 1/2 cup vegetable oil
Mix and bake.
Pumpkin Waffles

- 1 3/4 Cup whole wheat flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 2 eggs
- 1 1/2 cups milk
- 1/2 cup vegetable oil
- 2 heaping spoonfuls of pumpin puree
- pumpkin pie spice
Mix and bake.
Delicious Vegetarian Options in Restaurants (In Progress)
- Cafe Fresh, 500 S. State Street, Orem, UT: There are two amazing vegetarian sandwiches here, and I will get their names and post them here soon!
- Panera Bread: The Mediterranean Veggie cafe sandwich is incredibly delicious.
- Nordstrom Cafe, Horton Plaza in San Diego: How many Nordstroms have restaurants attached to them? I have no idea, but the one in downtown San Diego goes, and they have a great veggie sandwich there. It’s probably overpriced, but it’s Nordstrom, so this isn’t a surprise.
- Cafe Rio: This restaurant is appropriately glorified in Utah and while it may not be the most healthy of vegetarian choices for eating out, the Beans Rice & Cheese burrito does not disappoint. If you’re looking for a smaller serving, you can get a Beans Rice & Cheese enchilada.
Note: You can usually substitute a veggie patty on any burger at restaurants. This simplifies things significantly. However, I should note that Wingers doesn’t have any vegetarian options. At all. Well, they do have a side salad, and the dressing is really scruptious, but that’s about it. Just keep that in mind.
